In Collina Segalari, located on the western slope in the heart of northern Maremma, there is the farm of Paola Cardellini.
This small business, an azienda agricola as we say in Italian, has its roots in the family’s passion and love for the land and farming, that has been handed down over the years.
There are different types of olive trees distributed in terraces facing the sea, where they have managed to recreate their habit thanks to the natural environment, the biological characteristics of the soil and the mild climate.

The attentions we put in harvesting and pressing olives make our extra virgin olive oil excellent.
The farm Paola Cardellini creates a one-of-a-kind evoo, following the best and most traditional methods thanks to an extra-care.
We produce a selected variety of extra virgin olive oils that meet different tastes and pairings:
✔ Leccino is perfect for delicate tastes, like fish, steamed vegetables etc.
✔ Frantoio is excellent with all the most traditional Tuscan dishes
✔ Pendolino is recommended with fish
✔ Moraiolo is suggested with meat
✔ Extra Virgin Olive Oil I.G.P. (Indicazione Geografica Protetta) is suitable for any kind of cuisine
Our farm also produces a very special Passata di Olive, i.e. an olive purée, that has a delicate taste and the intense smells of Tuscan ripe olives.
At the hotel restaurant we use our extra virgin olive oil and clients can buy it directly from us.
The farm is open for tours and tastings.
